The jumbo lump crab meat is sourced from a particular part of the crab. The solid pieces of white meat are extracted from the muscles of the two flipper swimming legs. Since each crab only has two of these muscles, a significant number of crabs are required to fill a container of jumbo lump crab meat, making it the most expensive type of crab meat. This crab meat can be used whole in recipes such as sautéing.
